My blog is a combination of many different topics, as I like to dabble in whatever inspiration guides me to do. Growing up in Minnesota, I have always had a strong connection to nature, water, and the animals. I have always had a soft heart for the creatures of the earth and spent my youth caring for, and trying to save them. My love for animals eventually prompted my decision to become a vegetarian in 2012. This later inspired me to start creating healthy vegetarian recipes. I currently live in Washington and love the state for its majestic natural beauty. My passions involve visiting the beach, kayaking, photography, writing, cooking, hiking, essential oils, and spending time with my pack of dogs and various other pets. I left the traditional workforce in 2013, completing a 15 year career in Social Work. My decision lead me to delve deeper into my own personal spiritual journey. I furthered my education with Reiki and Crystal Healing, in order to help others with their own healing through alternative natural healing methods. Therapeutic essential oils found me in my pursuit of additional natural healing options for my fiancé. I was inspired to venture into the world of essential oils and joined Young Living Essential Oils in 2015. My fiancé and I started using them daily and could really “feel” the difference these oils were making in helping us improve our health. I then decided I wanted to help others and began selling essential oils with Young Living, with the goal to guide others towards chemical free wellness alternatives for their own lives and homes. I was then inspired to further my education at Aromahead Institute where I am currently studying to become a Certified Aromatherapist. My essential oil passion has only grown from there and I also create my own line of essential oil infused products through Wellness Inspired Oils & Herbs by Jennifer. Always a spiritual seeker, I was guided to A Course in Miracles (ACIM) in 2016 and am currently enrolled in a Licensed Practitioner Program through Teachers of God Foundation. Discovering ACIM was truly a coming home moment for me and I look forward to watching this spiritual journey unfold. Writing has always been a passion of mine. I kept a journal and wrote poetry in my youth, gravitating towards writing courses while I was in college. It has always been part of my vision to publish a book.

30 Day Update

I have to confess…I procrastinated on posting my update on my progress with the new health supplements I am using for weight management.  I did weigh myself at the beginning of the month though, so I will be posting those results.  I will admit, I was not sure what to expect because I did not consciously focus on increasing my exercise, or changing my food choices.  Partly due to June being my birthday month and allowing myself to do some indulging I do not usually do, but partly because I have seen so many supplements and weight loss products on the market that people talk about losing so much weight. Then when you read about it, you also find out that they completely amped up their exercise routine and went on a “diet.”  No shocker there….of course you are going to lose weight when you fully change your lifestyle, with or without supplements to help.  I wanted to see what would happen when I added some Slique products to my current lifestyle and go from there.   Continue reading 30 Day Update

Crockpot Refried Beans

A super simple delicious and nutritious vegan refried bean recipe.  Enjoy!

 

Ingredients:

3 cups dried pinto beans (rinsed)

8 cups water

1 large yellow onion (cut in quarters)

2 jalapenos with seeds (cut in thirds)

2 heaping tablespoons of minced garlic

5 teaspoons himalayan salt

1 teaspoon cumin

 

Directions:  Place all ingredients in large crockpot and cover. Cook on high for 6 hours, or until beans are soft.  Spoon off excess liquid, leaving enough to create a creamy texture when blended.  With an immersion blender, blend until creamy.  Serve with your favorite mexican food, or with chips and salsa. Enjoy!

Avocado Grilled Burritos with Tangy Cashew Cilantro Sauce

This is a favorite vegan recipe in my house.  Enjoy!

 

Burrito Filling:  2 Servings, using 10 inch soft taco shells

2 large avocados, peeled, pitted, and mashed (or diced, depending on preference)

2 tablespoons chopped red, or yellow onion

4 tablespoons of sun-dried tomatoes, chopped

1/3 cup fresh cilantro, chopped

1/2 tsp sea salt

*Dipping Sauce:  

1/2 cup chopped salted cashews

1/2 cup avocado oil

8 teaspoons white vinegar

2 teaspoons balsamic vinegar

1/4 cup raw honey

1 1/3 cup fresh cilantro

1 tablespoon minced garlic

1/3 cup white onion

1/8 teaspoon turmeric

2 tablespoons sugar

2 teaspoons ground black pepper

3 teaspoons cumin

Directions:

Dipping Sauce:  Place cashews in blender and finely grind.  Add avocado oil, vinegars, honey, cilantro, garlic, onion, turmeric, sugar, black pepper, and cumin.  Blend until texture creates a smooth dipping sauce.  Set aside.

*If you have leftover dipping sauce, add 1/8 cup cashew milk to the blender with sauce and combine.  This creates a tasty salad dressing to add to your favorite green salad.  Refrigerate.  

Burritos:  Preheat griddle to 350 degrees.   In a bowl, mix together avocados, sun dried tomatoes, onion, cilantro, and sea salt.  Divide filling evening and place in the center of your tortilla. Pull the bottom half of the burrito over to meet the top half.  Pull the tortilla back, forming the avocado filling into a roll.  Fold one side in, and then the other side.  With both ends folded, tightly roll your tortilla into the perfect burrito.  Place burritos on the grill and heat both sides until brown to your liking.  Place on plate and add desired sauce.  Enjoy!!

  •  Suggested sides:  Spanish rice, refried beans (see my recipe for vegan crockpot refried beans in the recipe folder of this blog), or green salad (with the tangy cilantro sauce.

Three Weeks Into My Journey

Day 3

I’m finishing up day 3 of my challenge and so far, I like these new supplements. I have been consistent with the CitroSlim and what I notice most so far is the energy they give me. I have definitely had a nice consistent boost of energy the past 3 days and better focus too.  I am getting more done with less of my own brain distractions. That alone is a huge reason for me to continue with this experiment. Zeus’s Spa Day!

Oh…haircut day! My Knees are Thanking Me!!!

Peace Through Love

I woke up feeling fear and chaos in  the world strongly today.  Energetically, it feels like a tornado spiraling out of control, randomly touching down and destroying everything in its path.  The cause is F-E-A-R.  Fear breeds fear, anger breeds anger, hate breeds hate.  The truth is….violence will only bring more violence, as like attracts like.  We cannot hope to achieve peace by violent measures….ever.  It is impossible and that thought process has been failing for as long as people and nations have been divided. Aren’t we ready for a more evolved thought process?
